AN old baking tradition has been revived by an exhibitor who will be taking part in this year?s Tavistock Food and Drink Festival. The Incredible Fruitcake Company has introduced a box which is made in wood from a sustainable managed forest and is completely recyclable. Baking in wooden boxes is an old baking tradition and means the box can then be used to bake cakes time and time again. Mary Galbraith, partner in the Incredible Fruitcake Co, said: ?It bakes fruitcakes very evenly and produces very moist beautifully baked cakes. Once you have used the box several times it turns a lovely golden colour.? At the festival on July 28 and 29 the company will be selling boxes containing a pre-baked cake together with a leaflet with recipes for the fruitcakes. The festival will open at 9am on Saturday and 10am on Sunday, closing on both days at 5pm.
