STUDENTS from City College Plymouth have teamed up with top Devon chefs for a game-smoking demonstration and clay pigeon shoot at Lewtrenchard Manor.

Hospitality and catering students from the college visited the manor on April 8 to work with Peter Gorton preparing and serving the canapés at the event.

Peter, chef and owner at Gorton's of Tavistock, showcased the plethora of delicious ways that game meat can be incorporated into restaurant menus and how to smoke it using a Bradley Smoker. Wood pigeon, partridge, pheasant, venison saddle and venison liver were showcased in a selection of canapés. The event was organised by the Chefs' Forum.

Head of curriculum for catering and hospitality at the college, Helen Marshall, said: 'The event was a great chance for our students to demonstrate their impressive skill sets. Guests were extremely impressed with the quality of the canapés and professional service.

'We are delighted to be working with the Chefs' Forum and increase the opportunities for our students to learn from local chefs and develop work experience leading to apprenticeships.'

The Chefs' Forum launched in January 2012 in Bristol and has since expanded to include highly accredited chefs, catering colleges and top suppliers on a South West regional level. The initiative is designed to link top chefs with catering students in an effort to create positive change in the hospitality and catering education sector.

Catherine Farinha, founder committee member of the Chefs' Forum and event organiser, said: 'The magnificent Lewtrenchard Manor, owned by the Murray family, was the perfect venue to commemorate an extremely successful first year in Devon.

'We have forged valuable links between catering colleges and top chefs in Devon's outstanding local restaurant scene. '
