THE first Devon Farmers' Market Cookbook has been released with a host of stall holders from Okehampton taking part.

Full of mouth-watering dishes using produce on sale at markets around the county, the book is a summer edition, featuring seasonal fruit and vegetables.

Some of the contributors who can be seen at Okehampton Farmers' Market every month are Blissful Buffalo and Hill View Honey from Holsworthy, Westerleigh Cheeses from Bideford and Westlake Orchards from Beaworthy.

The foreword in the book is by Tina Bricknell-Webb of the award-winning hotel and restaurant Percys at Coombeshead. She said that farmers' markets were an endorsement of the way of life in the region bringing character and traceability to the food that we eat.

'Seasonality is a word that is now fast becoming fashionable once again with local supermarkets starting to question the need for exotic imports. Cooking through the different calendar months allows food to be enjoyed at its finest and captures anticipation of forthcoming harvests.'

The book was commissioned by Devon Food Links, which is working in conjunction with farmers' markets to secure more funding for them.

Jonathon Smye from the organisation said all the recipes had been tried and tested and were using ingredients that could be obtained at farmers' markets.

'It makes that extra link between the producer and the consumer when the producer is not just selling the product but using it to create something as well.' he said.

'Because it is the summer edition there are a lot of lamb recipes whereas the winter will feature more game.'

The publication is on sale from Okehampton Farmers' Market, priced at £2.

All the proceeds will go back into Devon's farmers' markets.
